Amaranth is considered a superfood because its seeds contain two key amino acids that are rarely found in plant foods: lysine - much more than other grains - and methionine, an important amino acid in tissue growth and repair. It is rich in fibre, linoleic acid, iron, contains calcium, magnesium, phosphorus, potassium and vitamins A and C.
