Type 550 flour is characterised by its degree of milling and its bran content. In Greece we also describe it as the flour for all uses. The lower it is depending on the bran content, the lower the number it gets and the whiter it becomes. So the 55% type flour is ideal for luxury bakery products, toast, bread, breadcrumbs and generally for products with high protein content.
