Like Emmental, mountain cheese is a typical hard cheese made in the Allgäu. Strong and robust on the outside, ÖMA Heumilch Bergkäse turns out to be a rich classic in taste. It is exceptionally flavorful and the smooth texture of its dough melts in your mouth. It is made from the purest hay milk from Demeter cows with horns in our cheese dairy in Leupolz. During the ripening at 15°C, the mountain cheese is turned twice a week and rubbed (smeared) with a light brine. This gives it a piquant aroma and a smooth dough.
