Demerara sugar is a type of natural raw cane brown sugar with large crystals with a golden yellow colour. Its name, which is of protected origin, comes from the Demerara colony in Guyana, where it was originally produced and is now produced in Saint Mauritius, retaining the rights to the name.
The production process is simple and no chemicals, additives or other harmful technological processes are used. The sugar cane mass is compressed and steam is used to produce sugar syrup, which is dehydrated and the sugar is crystallised. This preserves the natural flavour of the cane and the nutrients, mainly calcium, phosphorus and iron salts. Calorically it provides less calories to our body, 3.73 calories/g. compared to white granulated sugar which provides 3.96 calories/g.
